Paul Bartolotta has always kept his condo in the Gold Coast, even when he left Spiaggia to move to Las Vegas, to open up Bartolotta Ristorante Di Mare at the Wynn Resort. He's made no secret of his love for Chicago. So it was interesting to hear him say, while showing off his "Italian-speaking seafood" at an interactive lunch at the Encore in Las Vegas, that his plans to return to Chicago could happen "sooner than you might think." Perhaps he was just giddy about his charity winnings the night before at the blackjack table, or perhaps it's just time for a change. Either way, if the four-star, James Beard Award-winning chef decides to truly return, it will surely shake up the establishment, and bring new vitality to Chicago's Italian culinary landscape.
