Baking Guru Dorie Greenspan On Expanding The ‘Cookie-verse’

Baking extraordinaire Dorie Greenspan says she wants to expand the idea of what a cookie can be. In her new book Dorie’s Cookies, she attempts to do just that, offering up 170 recipes that go beyond mere chocolate chip and oatmeal raisin. 

There are recipes for “savory cookies,” including cheddar-seed wafers and hot-and-spicy togarashi meringues. There’s the chapter on brownies, bars, break-ups and biscotti. And there are plenty of delicious and intriguing one-offs, like a mini madeleine made with white chocolate and matcha, the Japanese green tea powder.
