Opening a restaurant comes with its own set of unique challenges-staying within budget, meeting diners’-and critics’-expectations and creating a menu that keeps guests coming back. Chef Curtis Duffy met all these head on when he opened his restaurant Grace. His reputation as an award-winning chef at Avenues and Alinea set a high bar, but operational delays put the restaurant opening back seven months. In a new documentary, Chicago Tribune writer Kevin Pang profiles Duffy’s road to opening Grace, and introduces a far more complex journey that brought him to the kitchen in the first place.
