Think beyond the tater tot. Serving fresh cafeteria food is not only possible, it’s practical and beneficial, too. Though many school districts haven’t yet jumped on the bandwagon, large school districts like those in Chicago and LA have already come a long way in ramping up their healthy selections with the help of onsite edible gardens and increased local farm procurement.
