Something You Should Eat: Pork "wings" from Flo & Santos
Flo & Santos is a simple neighborhood joint next door to Gioco in the South Loop. It quietly opened this Spring, featuring a menu with a split personality. There was, in fact, a real Flo & Santos - one was Polish, the other, Italian - so the menu shares those cultures. You can find an excellent plate of homemade pierogies, but you can also try a thin-crust pizza. I'm more interested in the flying pork "wings" they have in the appetizer section: think brined, braised and fried pork shank, generously but not obscenely coated in either buffalo, teriyaki or BBQ flavors.
