From the lines that form well before it opens, you can tell Franklin’s Barbecue is more than a Texas staple. It’s become renowned around the world. The namesake pitmaster-Aaron Franklin- will be holding court in Chicago this weekend, to celebrate the long history between the country’s independence and smoking, grilling and devouring meat. We talk with Franklin about how he gets his barbeque to stand above the rest and ask his tips for grilling. We’ll also be joined by John Douglass, bar manager at Table, Donkey & Stick. Douglass is a featured mixologist at the Green City Market Chef BBQ coming up on July 16, and he’s got ideas and tips for the best cocktails to go with your warm summer nights around the grill.
