Increasing urbanization has put strains on the Chinese agricultural system. The labor-intensive rice crop remains the quintessential Chinese dish, but some scientists and policy advocates are beginning to push potatoes. It’s an uphill battle, since most people in China prefer rice.

Rebecca Kanthor reports from Shanghai that the cultural preference may have to change.
