A plant in western Illinois that slaughters horses is being allowed to reopen by an appeals court.

In May, Illinois Governor Rod Blagojevich signed a law banning horse slaughter for human consumption.

That forced the Cavel International Plant in DeKalb to close.

It was the last factory in the United States to process horse meat.

Now, it can remain open until the plant challenges the state law in federal court.

The company’s general manager says he’ll rehire at least some of the 55 workers laid off when the plant closed.

They’ll continue to work to ship meat to zoos in the United States and overseas for human consumption. 

Illinois Public Radio‘s Tony Arnold has been following the story and found himself asking the question, “Who exactly eats horse meat?”
