Jiro Ono may be Tokyo’s most famous chef. The 85-year-old sushi master is the subject of a new documentary, Jiro Dreams of Sushi. The film chronicles his life story and the worldview of Jiro. Film contributor Milos Stehlik shares his thoughts on the film. He is joined by Mike Ham, better known as “Sushi” Mike, who is the sushi chef at Tanoshii in Chicago’s Andersonville neighborhood. Mike discusses the art of sushi-making and what it takes to become a real sushi chef.
