Humans could cut as much as 30 percent of the earth’s greenhouse gas emissions if they would abstain from livestock-derived products.

We’ll talk with Stephen Eisenman, a Northwestern University art historian by day and a climate activist by vocation. He’s co-founder of the Anthropocene Alliance, a Chicago-based nonprofit. The group recently started an initiative called “Vegan Power” to educate the public on the benefits of a vegan lifestyle.

One big benefit, Eisenman says, is to the health of our planet. Articles on his website connect the dots between the meat industry and government. Eisenman also works with restaurants to increase their vegan options and increase supply for Chicago’s growing vegan demand.
