Earlier this year Chicago baker Greg Wade won the national James Beard Award for outstanding baker. It was meant to honor the deliciousness of the bread he bakes up at Publican Quality Bread, where he's Head Baker.

Worldview's food, health and culture contributor Monica Eng joins us for another installment of Food Mondays, and takes the opportunity to talk to Greg about praise his bread is getting for something else: sustainability and health.
