A team of scientists from Oregon State University recently found that if everyone in the U.S. decided to eat beans instead of red meat, the U.S. would be close to reaching its greenhouse-gas emission goals under the Paris climate agreement. 

Proponents of a meat-free lifestyle are hosting Veggie Fest Chicago 2017 on August 12-13, 2017 on the grounds of Benedictine University in Lisle, IL. The free event features internationally-known speakers, vegetarian chefs, health examinations by the Rush University Medical Center, children’s activities and lots of yoga. 

Jonathan Kruger, a Veggie Fest co-organizer, joins us to talk about the festival. Joining Kruger are festival speakers, Dr. Kunwarjit Singh Duggal, assistant professor of Physical Medicine and Rehabilitation at Rush University Medical Center and Arjan Stephens, executive vice president of sales and marketing for Nature’s Path Organic Foods and he’s acting director of the Science of Spirituality Meditation and Ecology Centre in British Columbia, Canada.
