The U.S. Department of Agriculture’s (USDA) Food Safety and Inspection Service (FSIS) had strict rules for accepting meat products from other countries. The inspection regimes of these countries had to be “equal to” U.S. standards. But various free trade agreements over the last twenty years have changed those rules, making equivalency or “close enough” the current standard. These countries and the U.S. have experimented with an inspection regime called HACCP-based Inspection Models Project or HIMP. This standard privatizes meat inspection and allows companies to use its own employees to inspect our meat Tony Corbo of the advocacy group Food & Water Watch, will give us some background on HIMP and tell us why he thinks we’re headed in a dangerous direction.
