Eat This! Insects could be a good source of protein
Earlier this year the United Nation’s Food and Agriculture Organization released a report about the viability of edible insects as a food source for the planet’s growing middle class that will be demanding more protein. The report concluded that entomorphagy-as insect eating is known-could make a positive contribution to the environment, human health and livelihoods. Afton Halloran, a consultant for the Edible Insects program of the UN Food and Agriculture Organization, explains.
