John Manion running the show at Branch 27
John Manion has been a busy guy as of late. After almost 10 years at Mas - a Division St. pioneer - he consulted on the opening menu at the Old Oak Tap, changed the Milk & Honey Bakery into Cippolina, then took over the helm at Goose Island Brewpub last year to rework the menu; most recently, he was tapped by the owners of Branch 27 to completely overhaul the menu and bring it up-to-date with things people actually like to eat. We spoke this week at the restaurant, where he is now the Executive Chef - permanently.
